(1) The present finding demonstrated 8-Methyl stearoyl carnitine is a potent PKC inhibitor and perhaps 8-Methyl stearic acid is a anticancer agent.

(2) Sodium stearoyl lactylate (SSL) is a kind of anionic food emulsifier.

(3) The hydroscopicity of plastic was significantly increased by glycerol monostearate or sodium stearoyl lactylate (SSL), but decreased by higher dosage of calcium stearoyl lactylate (CSL).

(4) Maltitol stearic acid ester was synthesized by condensation of maltitol with stearoyl chloride in the presence of the catalyst and with acetic acid as solvent.

(5) Effects of catalyst and solvent amounts, reaction temperature and time, and molar ratio of stearoyl chloride to maltitol were assayed. The optimum conditions of the synthesis are determined.
